Fabulous muffins! My daughter made this for our local 4-H county fair and got chosen to go to the State Fair! At the State fair, they earned her top honors....a purple ribbon! The only change we made was to add one finely diced mango at the end before baking so that there was more mango flavor. Moist, delicious, and heart healthy. Amazing muffins. A friend gave me 5lbs of bananas & 2 large avocados--this recipe was a good fit & doubled nicely. I didn't let my bananas get ripe enough so the predominant flavor in mine is mango but that works well here in our tropical climate. My husband absolutely will not stay out of these--he said he loves the flavor & that they are not overly sweet; great with a cup of coffee/tea.people found this review Helpful. LOVED these muffins! I didn't have mango so I used kiwi's instead, plus cut sugar to 1/2 cup and used 1 Cup whole wheat flour and 2 all purpose. I added macadamia nuts. They turned out fabulous and very tastey!!! I also baked them in regular sized muffin pans and got 24 muffins out of it! My 3 year old loved them and she didn't even know it had "hidden goodness" Will definitely make them again!people found this review Helpful.
