these are delicious! i used golden raisins and craisins as that was all i had for dried fruit. i also left out the oat bran as i didn't have any, but they turned out great!
These are wonderful! Kept pinching myself ... hard to believe they are so healthy. Used vanilla low fat yogurt, because that's what I had. Left out the wheat bran and flax seed, didn't have any. Used pitted prunes, dried apricots, dried pineapple, chopped dates, and craisins. The chewy dried fruit is a sweet treat in these moist, good-for-you muffins!
This is my favorite muffin recipe ever! I know I will make this recipe over and over again. It is delicious! I used golden raisins, dried pineapple and vanilla yogurt when I made mine. I froze half of the muffins for quick and easy breakfasts later...they do freeze very well. Pop one in the toaster oven to heat....Yummy!!! Many thanks blucoat!
I agree with the above reviewers that these muffins are great. Made them as per the recipe, using dates and blueberries. The blueberries were amazing - I highly recommend them. I did find the dates were a bit too sweet for me in the recipe. I think the muffins are actually a little on the sweet side without the dates (maybe because my bananas were super-ripe, almost black), so next time I will leave out dates and possibly reduce the brown sugar.
Agree with all comments. These are delicious and versatile. Recommend silicone liners as the low fat contents means these stick to paper liners.
These are delicious. I use any kind of yogurt that I have on hand. I add raisins and blueberries. They're moist and freeze well. Highly recommended!
