      Quick, easy and very tasty! Great on it's own. Would be fabulous with an egg on top, soft yolk, of course. The cheese is not needed. There is plenty of flavor without it and it does not really add to it.

      My teenage daughter calls this "the best food on the planet"! The only changes I made were that I cooked up 4-6 chopped slices of bacon then cooked the potatoes, onions etc. in the bacon drippings instead of the oil and butter. Add the bacon back to the mix at the end. This is great as a breakfast with pancakes. Even better when the syrup runs into the hash...YUMM!

      I added bacon to this mix and adjusted the size a bit. My husband loved it and wants me to make it again!

      Keep this in mind for your leftover Christmas ham. Simple, quick and delicious. I poached a couple of eggs on top of the ham mixture when it was almost done. Yum. Good for dinner or a hearty breakfast. Thanks for posting.
