Since yesterday was St. Patrick's day, I wanted to make some green food and came across this recipe. My family thought I was nuts when I said we would be having green eggs and ham! But there were no leftovers! Fun and easy recipe. Loved it!

I've been making this recipe for some time now and finally got around to writing a review. My kids absolutely love this dish. They ask for it all them time! I usually serve the ham on the side. Thanks for the great idea!!

This a great idea! I actually just made scrambled eggs blue and my son ate his ham on the side(yes he wanted it after i read him Green Eggs and Ham :))But I think I will try adding the diced ham so it turns green too. thanks!

Hi Cindy, I just have to tell you that I have made these colored scrambled eggs for my grand-kids and they just loved them! I have made them in many colors such as purple,red,orange,blue,green,pink and believe it or not Black! :o Yes my little grand-daughter loved to help me mix them up!:) That is the only way she would eat her scrambled eggs,is if we made them a pretty color!So anyone who has trouble getting your young ones to eat their scrambled eggs,just add a bit of color!
