Since yesterday was St. Patrick's day, I wanted to make some green food and came across this recipe. My family thought I was nuts when I said we would be having green eggs and ham! But there were no leftovers! Fun and easy recipe. Loved it!

Hi Cindy, I just have to tell you that I have made these colored scrambled eggs for my grand-kids and they just loved them! I have made them in many colors such as purple, red, orange, blue, green, pink and believe it or not Black! :o Yes my little grand-daughter loved to help me mix them up!:) That is the only way she would eat her scrambled eggs,is if we made them a pretty color! So anyone who has trouble getting your young ones to eat their scrambled eggs, just add a bit of color! Thanks Cindy for letting me tell you about my wee ones. :) Cheers, Nancy Wilson Northeast,England
