Incredible Oat Bran Muffins, Plain, Blueberry or Banana

"I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!"

  • 473.18 ml oat bran hot cereal, uncooked (I use Quaker)
  • 59.14 ml firmly packed brown sugar
  • 9.85 ml baking powder
  • 2.46 ml salt
  • 236.59 ml milk
  • 1 egg
  • 59.14 ml honey (I haven't tried molasses yet) or 59.14 ml molasses (I haven't tried molasses yet)
  • 29.58 ml vegetable oil

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

  1. I was apprehensive to try these because there is no flour. Sure enough these were really weird texture. The crumb was too chewy, and grainy, not muffiny. The taste was good tho. I am sure they are healthy for you, but I wont be making these again. Not pleased.....no flour should have known. I hate gluten free baked goods.
     
  2. These muffins are delicious! Made with blueberries and added vanilla extract and cinnamon. Before popping in the oven I sprinkled on unsweetened shredded coconut. Devine! I love that no flour is used in this recipe. So much healthier. I cooked for 12min and they came out perfectly moist and yummy! I will definitely make again and will try a savory muffin the next time.
     
  3. I eat one of these muffins every day for breakfast. I use 1/8 cup brown sugar Splenda as the only sweetener (omit the honey/molasses). I also use Ener G egg replacer, and substitute applesauce (a snack-size cup) for the oil. Oh and I add 1/2 tsp cinnamon. I guess it doesn't much resemble the original recipe, but it tastes good and is great for my cholesterol "issue". Even my picky preschooler loves these.
     
  4. Yikes! These really are incredible. I only added about 1T of honey... fine...filled the muffin tin to the top due to the fact that they really don't raise (making only 9) and I sprinkled them with slivered almonds. I think these are neither crumbly or tough... delish, I say!
     
  5. I would say that these were pretty good. I followed the recipe, using Bob's Mill Oat Bran, molasses, and Craisins. Next time, I'll add either sunflower seeds or chopped pecans or walnuts on top to give them a little bit of crunch. I bought a bunch of oat bran from Amazon, so I've got a lot left to use up. I see more of these muffins in our future! I'll switch it up next time and try using a banana instead of the Craisins, and the time after that, I'll try making blueberry muffins. I baked my muffins at 375° -- after reading that someone's comment that their muffins burned at 425°, I figured that I'd better err on the side of caution. The recipe made 12 muffins and each muffin worked out to be 175 calories or so.

Tweaks

  1. I use Apple sauce in place of vegetable oil for a healthier alternative. I've also tried adding a dollop of peanut butter to mix up the flavor a little- my son loves it
     
  2. Substitute buttermilk and baking soda - more tender muffin with a more impressive rise.
     
  3. No need for sugar AND honey. One or the other. As with any baked goods, the recipes are waaaay over sweetened. Always cut your sugar in half. (and no need for more than one type). A dollop of greek yogurt adds moisture.
     
  4. I make these with only the honey, no sugar, and find them delicious....I chop walnuts for the top or use sunflower seeds. A wonderful healthy treat, I freeze an then thaw as needed warming in the microwave....yummy!

I love baking best of all, especially breads and cookies, and I'm always looking for new bread recipes to try. I also enjoy recipes using fresh fruits that are refreshing and not overly sugary. I am very sporty and active so I like foods that give you a lot of energy with good nutrition too.
