Kelly's Favourite - French Toast in a Bowl - for One or Two

"I was certain this was adapted from a Kraft recipe, but search as I might, I can't find it anywhere. Thank goodness I wrote it down. This is a quick and delicious breakfast item and one of my daughter's favourites. Surprizingly filling too. You can change up the cereal and fruit to whatever you prefer, however I don't think I'd try it with Fruit Loops. ;) I make this in two - 3" ramekins, but it could easily be made into a single serving. You would however, have to increase the cooking time slightly."

  • In a small bowl, beat together the egg, milk and vanilla.
  • Add bread, cereal, cranberries and nuts. Allow a minute for the liquid to be absorbed.
  • Scoop into two - 3" ramekins, or one of a larger size.
  • Microwave separately, on HIGH for 1-1/2 - 2 minutes.
  • Serve with butter and syrup.

  1. I used raisin bread, granola with almonds and walnuts, so I didn't add dried cranberries or additional walnuts. I made it the night before, and in the morning baked it at 350°F for 20 minutes. DH and I agreed it was tasty, but would have been better without the granola topping. The raisin bread was a batch that hadn't risen well, so it was a little dense on its own; however, once the sauce soaked in, it was perfectly tasty and fluffy as french toast! Next time, I'll probably stop before the cereal step (so just eggs, milk, vanilla, and raisin bread) but this is a really great make-ahead single-serving-ramekin french toast! It's even got the option to bake for crispy or microwave for speed!
     
  2. Simple and relatively fast to make. I crushed a 1/4 cup of Nature Valley Pecan granola bars for the cereal and nuts and used raisins for the dried fruit. Also used the 350 for 20 minute method. Make sure to oil the bowl before you put these in. Whoops! Very good and healthy breakfast idea.
     
  3. Quick, simple and a nice treat for those hurried mornings. Love the use of cranberries and nuts. Made using Bran Buds but think next time will use Granola would be even better. Also love the fact that it only makes two servings with out a lot of dishes. Thanks so much for the post.
     
  4. What a lovely quick & tasty brekky. I used fruit bread so left out the cranberries & used some special K for the cereal. I'm sure I will make this again. Thanks for posting!
     
  5. I baked this and left out the nuts because I used granola with nuts in it. It was a nice quick breakfast.

Tweaks

  1. Talk about fast and easy! Similar to a bread pudding in taste, but not as sweet, and seriously delicious. Unable to eat wheat, I used a commercial gluten-free bread and gluten-free puffed rice for the cereal, plus I subbed sultanas for the cranberries (all I had on hand). Gluten-free bread doesn't absorb as much liquid as real bread, so it took a little longer to cook the liquid out than the recipe recommended. I may try using a bit less milk next time. Following the advice of another reviewer, I made one in the microwave, and one in the oven (350deg for about 25 minutes). The oven one developed a nice crusty top which was lovely.
