What can I say, this was so much more than I expected. It was great and healthy, too. Added a few black olives to just up the Greek flavor, tomatoes would be a good addition, too. Made for ZWT9

Super healthy, low fat, yummy and super easy. It would be hard to find anything wrong with such a recipe! The only difference I made was to use one whole egg and two egg whites. I often do that with egg white omelettes. My feta was a bit salty so I skipped adding extra salt. Made for Zee Zany Zesty Cookz for ZWT6.
So tasty and healthy, the feta cheese gives enough flavor and tang that salt is not need for those on low sodium diets, did add just a dash of pepper. Made for breakfast this morning, but thinking would also be good on some toast as a breakfast sandwich. Perfect for a healthy start to the day.
