I was not expecting to like this (I really don't care for granola bars and never have). But I was surprised by not only how easy this was but how good it tasted. They are more like a gooey bar cookie and not overly sweet. I added a bunch of different nuts/seeds including cashews, sunflower seeds, almonds, etc.; dried cranberries and raisins. Half of the homemade peanut butter was replaced with tahini and I really liked the flavor of those two in this recipe. Reviewed for Adopt a Veg.

WOW, these bars are sooooo tasty! They were gone super quickly in our house as everyone raved about them and couldnt stop eating them. I used home-made tahini in place of the peanut butter as I cant have peanuts and it worked out nicely. The sesame seeds from the tahini added a more earthy taste, but I liked that. Instead of almonds I added sunflower seeds, but other than that stuck to your recipe. The bars stuck together nicely, but I did have to bake them in a smaller pan so that they were really chunky. The cinnamon and oats paired very well and the cranberries were a lovely fruity addition. I will certainly make these tasty treats again! THANK YOU SO MUCH for sharing another keeper with us, stingo! Mine came out more like a big cookie than granola bars. Delicious, fast & easy, though, so who cares? Made (very late) for Veggie Swap 3/10.

Have no idea of how my 2 changes might have altered these bars (outside of nutritional changes), but I totally did not see the 'egg white' ingredient & instead used a whole egg! Also used some extra chunky peanut butter instead of the natural kind! But, when all was said & done, I did have some wonderful bars, & for me that's the most important thing! Outstanding recipe! Mine were kind of crumbly as well, but I just smooshed them together after baking and stuck them in the freezer. They're fine now, although I wouldn't say that the consistency is very much like a normal granola bar. The flavor can't be beat though.

These were quite simple to prepare, but I am not sure that I baked them quite long enough. I read the warning in the recipe that the top needed to be firm, and I thought it was, but the bars are quite crumbly. The flavor is very good, though. The pop of the dried cranberry balances well with the heartiness of the oats and almonds and peanut butter.

I made these to take to work yesterday for the kids that I watched since I was tired of bringing in those pricey store bought granola bars. The kids liked these better than the stored bought ones which is great for me, saves me a lot of money now! Will make again and again!

It's better than any store bought bar could ever thinking about coming up with. I'm defintely going to make these again. It's a keeper!!
