- 2 (453.59 g) package jimmy dean maple brown-and-serve sausage
- 828.06 ml O'Brien potatoes
- 354.88 ml shredded cheddar cheese
- 295.73 ml milk
- 5 large eggs
- 2.46 ml salt
directions
- Fry the sausage, and add to the potatoes, the 5 beaten eggs, milk, cheese, and salt. Stir together.
- Put in a greased 2-quart casserole dish.
- Bake at 350 degrees for 50 minutes.

This is a favorite of my family and friends. For church brunches, I am usually asked to make this. Perfect for small or large groups. There is never any leftovers. I double the recipe using one regular and one hot Jimmy Dean sausage. I also use half cheddar and half pepper jack cheese and sprinkle more cheddar on top when it is almost done.

Delicious! The first breakfast casserole that was able to keep a square shape when cut and not fall over or be runny. Love that. When I headed to the store they were out of maple brown and serve sausages so I went for Jimmy Dean bulk reduced fat breakfast sausage (12oz) and I got the last bag of O'Brien potatoes. We fried the measured pototoes according to package directions and fried the bulk sausage seperately. In another bowl we beat the eggs, added milk (used 3/4 cup whipping cream and the rest millk) and cheese and salt then combined it all in a big bowl and poured into a butter greased pan. The time on this in our oven was well done. I would check it at 45 minutes just in case. This breakfast would be good for most folks. If you need more seasonings or a kick just add it. Wonderful recipe! I did change and use the regular link sausage and diced them up into bite size pieces. I also added some diced up Canadian bacon. Fried the sausage up first and added the Canadian bacon than the potatoes and set aside. Than in a large bowl I mixed the egg and milk (which I used 1/2 c whipping cream and 1/2c regular milk along with the 1/4 c) and than I added the sausage mixture and cheese and stirred up all together and placed in a lightly greased baking dish and let bake 1 hour to make sure the eggs were well done. Turned out FABULOUS!! I also served homemade gravy over top. We had company over and they just loved breakfast this morning :) Thanks so much for sharing the recipe! I will be making this one again in the near future.

This is my second recipe from the PAC event. I made this using Jimmy Dean regular bulk sausage because my family does not like the maple flavor. Next time I will use the hot version of the same sausage. As our family eats onions in almost everything I added about 1/2 of a chopped sweet onion when the sausage was almost done. I added my potatoes to the pan with my sausage and let them brown a little before mixing everything together. I will use more cheese next time I make this and also add some garlic and probably more onions also. This was a great base breakfast that is quick and easy with lots of options. I will make this again!
