  • Preheat oven to 350.
  • Mix dry ingredients in bowl.
  • Mix wet ingredients in a separate bowl.
  • Combine dry and wet ingredients, blend well.

  1. yes, i have had better tasting mufffins before, but i felt very good feeding these to my kids. and they really liked them (which is the real test - since it doesn't matter how healthy something is if no one will eat it :)). per Lynnster, the 1/2 tsp baking powder should read baking soda (she has submitted a correction already). i subbed real sugar for the Splenda since that was all i had and also added 3 Tbsp of mini choc chips as insurance that my kids would try them. don't think they will last long in my house. thanks lynnster
