  1. Beat together egg, egg whites, sugar, milk, oil, pumpkin and vanilla.
  2. Mix dry ingredients.
  3. Add to egg mixture.
  4. DO NOT OVERMIX.
  5. Fold in apple and nuts.
  6. Make waffle in your waffle maker with about 3/4 cup of batter per waffle.

Very good. The finely diced apples wake up the mild pumpkin flavor. The nuts add texture to the waffle without overpowering the other flavors. The batter is a nice consistency and is easy to work with.

These were amazing! I had to cook them on higher heat than my regular waffles due to pumpkin and apple moisture. Served with sauteed cinnamon honey apples. Perfect for a crisp fall morning.

I used 3/4-1 c. canned pumpkin and no apple. Very moist and flavorful.
