- 236.59 ml egg substitute (Egg Beaters)
- 354.88 ml spinach, chopped
- 118.29 ml part-skim ricotta cheese
- 236.59 ml cooked chicken (I used 1 chicken breast, see note in description)
directions
- Whisk together ingredients in a bowl.
- Spray skillet with Pam and heat of medium.
- Pour egg mixture into skillet and cook, stirring until done.
- Note: I also think this will work as an omelet, cooking until done and folding in half.
