    A simple and quick low fat, healthy breakfast of Scrambled Eggs over Garden fresh sliced Tomatoes and Basil. Add if you want even a healthier version go for just egg whites.

    Directions:

    1. 1
      Beat eggs slightly with fork adding 2 minced basil leaves, pepper, and a 1/2 teaspoon water.
    2. 2
      Heat pan, spray Pam, add the mixture.
    3. 3
      Cook until of creamy consistency, stirring and scraping from bottom of the pan.
    4. 4
      Sliced and plate the tomato top with scrambled eggs and garnish with basil and season with salt and pepper.

      A lovely flavourful way to serve scrambled eggs. loved the combination of basil, eggs and tomaoto and will use it often for a quick meal. Thanks for sharing a tasty repeater!

      Simple and wonderful. Eggs, basil and tomatoes go together soooo well! One of my favorite combos. Yum!

      We've often had fried tomatoes with breakfast but this was a first with fresh. Just made this with ham & toast for a big breakfast and Carly and I both gave it a thumbs up...we also will be skipping lunch today! ZWT3 Family Pick.
