- 1 tablespoon olive oil
- 1 teaspoon red wine vinegar
- 1 cups chopped tomatoes or (28 ounce) can plum tomatoes, drained and chopped
- 2 tablespoons chopped fresh chives or 2 tablespoons scallions
- 4 -6 slices whole-grain bread
- 1⁄4 lb prosciutto or 1/4 lb good-quality ham, thinly sliced
- 8 eggs
- 1⁄4 cup heavy cream
directions
- Heat oven to 375º F. In a medium bowl, combine the oil, vinegar, tomatoes, and 1 tablespoon of chives.
- Arrange the bread in a single layer in a 13-by-9-inch ovenproof baking dish. Top with the prosciutto and tomato mixture.
- Break the eggs on top and drizzle with the cream. Bake until the whites have set but the yolks are slightly runny, 15 to 20 minutes. Garnish with the remaining chives.

What is there not to love and adore about this dish? So yummy and tasty it actually got my dog, a mastiff to stand right up and "wolf". The aroma whilst baking, especially the dressing, poured over the tomatoes, the chives, the bread, the eggs. I didn't have cream, so I made a concoction up of skim milk, light sour cream, and 1% cottage cheese (blended in blender) then added to the top. Fresh chives donned the top and I had some very thin sliced Smithfield ham that was used. Very yummy :) and will make again and soon too! Made for Everyday is a Holiday May 2009

Very good, versatile recipe! Was a tad concerned about the vinegar, but put it in and it was fine! (You never know unless you try.) I pre-cooked pepper bacon and cut the bread into cubes so it would be easier to get out of the casserole as I was making a half batch inside a greased 1 quart casserole dish-a pretty small dish. Baked for 25 minutes. Thanks for a wonderful lunch, kittycatmom! Made for 1-2-3 Hit Wonders!
