These were great! I veganized them using soymilk and egg replacer. The batter was very thick so I added quite a bit of water. Also some baking soda, since my family was expecting something more pancake-like and with the apple, I knew these would be on the heavy side. They're not your traditional pancake, but moist and yummy-tasting. I tried with peanut butter, but in the end preferred maple syrup. My family loved them! Thanks!

These are so yummy and so filling. They were so easy to prepare even Little Miss (DD) helped. I used lactose free milk instead of nonfat milk and I used egg substitute. Otherwise kept to the recipe and it mixture made five cakes, perfect for just the two of us. We topped them off with berries and real maple syrup. Thank you 7emmalee7
