Super Easy One-Dish Breakfast

"My MIL made this the first time we met. It's totally yummy. The combo of ham, eggs, and potatoes work great together for breakfast, brunch, dinner, or whenever! This also reheats very well. So easy with loads of flavor. For a nice twist I sometimes sprinkle with cheddar before serving. Hubby likes it with hot sauce and ketchup on the side. Note: To make cook time shorter, slice the potatoes thin so they cook faster."

  • 453.59 g potato, peeled and cut into bite sized pieces
  • 1 small onion, diced
  • 453.59 g ham, cubed
  • 8 large eggs, beaten
  • 14.79 ml safflower oil

directions

  • Brown potatoes and onions in oil until potatoes are almost done. Add ham and heat until potatoes are done cooking. Pour eggs over all, stirring continuously until they are done.
  • Serve hot!

  1. This recipe got rave reviews at the table! My 16 yr old DS had two school chums over for the night so this morning I made this recipe along with some pancakes for us. Since there were no seasonings mentioned in the ingredient list I used what I had on hand; about 1/2 cup chopped fresh basil, 1/2 teaspoon chopped dried oregano, 2 cloves minced garlic, fine ground sea salt & fresh ground black pepper (to taste). Everyone especially loved the addition of cubed ham. Even my toddler ate it because of that! :) I also changed the technique slightly by slicing the potatoes thinly then after they, the garlic & the onion were cooked I poured them into the bowl of beaten eggs & spices, stirred, then poured it all back into the hot pan. I let this sit & cook, lifting the edges slightly to let the wet egg run underneath & then just before the top was set I cut it all into pizza-like wedges, flipped them for a minute to brown the tops & served them.
