Sweet Potato Hash With Bacon

Ingredients:

Servings: 6

• 1/2 lb sliced bacon, cut into 1/4-inch strips
• 2 medium onions, chopped
• 1 large red bell pepper, cut into thin strips
• 2 lbs sweet potatoes, peeled and cut into 1/2-inch cubes
• 1 teaspoon chopped fresh thyme

Directions:

1. Cook bacon in a 12-inch nonstick skillet over medium heat until crisp. Transfer to paper towels, reserving fat in skillet.
2. Add onions, bell pepper, 1/2 teaspoon salt, and 1/2 teaspoon pepper to skillet and cook, stirring occasionally, until vegetables are softened.
3. Stir in potatoes and 1/2 teaspoon salt and cook, covered, stirring occasionally, until potatoes are tender and starting to brown, 10 to 14 minutes.
4. Stir in thyme, bacon, and salt and pepper to taste.

this was wonderful dicentra! I love sweet potatoes, and of course anything with bacon rules. But you put this all together with the peppers and onions...........this will be on our table at Christmas. And I know my family will love it just as much as I do!! Happy Holidays dicentra!
