NEW FAVORITE PANCAKE RECIPE! These came out amazingly light & fluffy....something I have learned not to expect from whole-grain recipes. I used organic skim milk, subbed applesauce for the oil, and subbed vanilla extract for the almond. I also added 1/3c of mini semi-sweet chocolate chips, 2 mashed bananas, and 1/2t of cinnamon. I usually make a double-batch on the weekend and add various fruits, then freeze them for the kids to have for breakfast during the week. This recipe got RAVE reviews! And little do the kids know it's all healthy!! Bwahahaha!! Thanks for sharing!

Love this recipe! This is now a staple in our family. I make a double batch and keep in the fridge for quick morning meals. You can even grind steel cut oats and use those in this recipe. I use vanilla flavoring instead of almond. I sometimes add a cup of blended berries to the batter and they taste great!

The almond taste is a bit strong - but really nice texture. Added 2T of wheat germ. I will try this again using vanilla extract.

My, my, my, these are sooo good! I "pulverized" my quick oats in a food processor before using; didn't have buttermilk so used milk/vinegar option; and used vanilla instead of almond extract. Perfect! Topped them with agave/maple syrup to make them extra healthy. DH can't wait to have them again.

Thank you for sharing this recipe! I've been searching for a recipe like this (whole wheat flour and oats). The pancakes were so light and fluffy! This has become our family's fave pancake recipe! ;-)

We really liked these. I might use half butter flavoring & half almond next time. I really like how healthy these are. DH likes the boxed mix better, but he doesn't like to eat healthy. He DID eat all of them, though, so he "kind of" liked them, too. Thanks for a great recipe.

Pretty good! I like oats but I still cut the oats amount by half. Used applesauce for the oil & added some Splenda & 2 tsp cinn. Cooked nice & fluffy; thanks so much!

Terrific recipe, strawberrypie. Delicious and relatively low in fat, for a pancake. Since Dh isn't fond of almond extract I subbed vanilla. Next time I'll try some of it with the almond, as I adore it.
